Fermentation: after a selection of the finest bunches, the grapes were destemmed and pressed, and the must fermented on its skins for a period of approximately ten days.
Aging period: racking and aging in 130-gallon tonneaux for 24 months, long aging in glass for at least 18 months.
Alcohol level: 13,50%
Color: a brilliant cherry red with garnet highlights.
Aroma: complex and harmonious of small red fruits, ripe cherries, dried apricots with spicy notes, vanilla, licorice and cocoa.
Flavor: soft, full, tightly woven tannins, present, velvety and persistent. Complex and particularly pleasant aromatic closure.
Best paired with: excellent with elaborate dishes of red meat, pork, lamb.
Serve at: 17° – 18 °C

ORANGE RED SOIL: In the Biddine Soprana plateau, in the highest part of the coast at about 200 meters above sea level, there are very light soils with a red-orange sandy structure that give wines of great structure and complexity. From a single vineyard, the Cru Cerasuolo di Vittoria DOCG Classico Iri da Iri is born, a special wine whose name is taken from the last canto of Dante’s Paradise and which represents the dream of the wine history of Valle dell’Acate.
